| ........because the other day I made the BEST chicken I have ever made in my entire life.
Take skinless/boneless chicken breasts and marinade them two or three together, in freezer bags overnight, in the following:
Oil Balsamic viniager (or you could use some sort of wine) At least one cup of ground onions, shallots or leeks (I used leeks) At least one half clove of freshly ground garlic About a handful of oregano or italian seasoning A little bit of seasoned salt or plain ol' salt A dash of black pepper A handful of parmesan cheese
Get them out the next day and s-l-o-w-l-y brown them in an iron skillet. Butterfly fillet them to get the best flavor, and cook them in some of the marinade, poking holes in them with a fork as you go.
Then I made these with cubed potatoes (for the guys) with the same marinade mixture (not the mix that had been on the raw chicken though).....to match the flavor. I served it all with a green romaine salad and chunky bleau cheese dressing.
For the next couple of days, I sliced it thin on some green hearts of romaine with chunky bleau cheese for a quick and healthy lunch.
Lemme tell ya...............it was da bomb diggety giggety giggety.

| i've made similar things before...mum and dad never buy white wine, so i wasn't able to use that but balsamic vinegar is probably the best substitute.
